Parmesan-roasted Cauliflower
  1. Preheat oven to 425°.

  2. Toss cauliflower, onion, garlic, thyme, and olive oil on a large rimmed baking sheet; season with kosher salt and freshly ground pepper.

  3. Roast, tossing occasionally, until cauliflower is nearly tender, 35–40 minutes.

  4. Scatter Parmesan over and toss to combine.

  5. Roast until cauliflower is tender, 10–12 minutes.
