Preheat oven to 425°F
Cut chicken into cubes and place in a 9x13 baking dish
Pour in the entire jar of sundried tomatoes with oil, tomato paste, garlic powder, Italian seasoning, paprika, salt, and pepper. Mix well with tongs and spread into an even layer
Pour the dry orzo evenly over the chicken without stirring. Pour 4 cups of chicken broth over the top without stirring
Cover tightly with foil and bake for 35 minutes. While baking, set the heavy cream out to come to room temperature
Remove from oven and uncover. Stir in heavy cream, parmesan cheese, and spinach until combined. Top with extra parmesan and return to oven for 5 minutes
Let it sit for a few minutes, then serve and enjoy
