Chili Crisp Peanut Noodles with Crispy Halloumi

8 oz rice noodles or linguine

½ cup peanut butter

⅓ cup tamari or soy sauce

2 tbsp honey

¼ cup Thai red curry paste

1 tbsp grated ginger

2 carrots, shredded

2 bell peppers, thinly sliced

1 tbsp + ¼ cup sesame oil

8 oz halloumi, cubed

6 garlic cloves, chopped

½ cup fresh basil, chopped

½ cup fresh cilantro, chopped

2 green onions, sliced

3 tbsp sesame seeds

3 tbsp peanuts, chopped

2 tbsp lime juice

    Directions:

  1. Cook noodles as directed; toss with carrots and peppers.

  2. Blend peanut butter, tamari, honey, curry paste, and ginger with ⅓ cup water for the sauce. Mix with noodles.

  3. Sauté halloumi in 1 tbsp sesame oil until golden, then set aside.

  4. Crisp garlic in ¼ cup sesame oil with chili flakes. Toss half with halloumi, herbs, peanuts, and sesame seeds.

  5. Serve noodles topped with halloumi, garlic oil, and lime juice.
