Creamy Mushroom Soup
  1. Heat butter and olive oil in a large pot over medium heat.

  2. Add onion and cook for 4–5 minutes until softened.

  3. Stir in garlic and cook for 30 seconds until fragrant.

  4. Add sliced mushrooms and cook for 8–10 minutes until browned and tender.

  5. Sprinkle flour over the mushrooms and stir well. Cook for 1 minute.

  6. Gradually add broth, stirring constantly to avoid lumps.

  7. Add thyme, salt, and pepper. Bring to a gentle simmer.

  8. Reduce heat and simmer for 10 minutes.

  9. Stir in heavy cream and heat gently (do not boil).

  10. Taste and adjust seasoning. Serve warm.
