Brown 1 lb of ground beef with some diced onions
Once it is cooked, drain the grease completely
Add in a packet of taco seasoning, ⅛ cup of water and a can of drained Rotel
Let it cool completely
Roll out a pizza crust onto a piece of parchment paper
Top with 2 cups of chihuahua cheese, then the taco meat, then 2 cups of cheddar
Carefully roll it up and pinch all the seams together
Place it on a baking sheet
Brush with 2 tbsp of melted butter and top with a bit more of each cheese
Bake at 425 degrees for 20-25 minutes or until the crust is cooked through
Garnish with fresh cilantro if desired
Let rest for 10-15 minutes before cutting
