Creamy Chicken And Mushroom Orzo
  1. Preheat oven to 400°F.

  2. Add the orzo, Boursin cheese, and 3½ cups water or chicken broth to a large baking dish. Bake for 20 minutes.

  3. Meanwhile, season the chicken thighs on both sides with salt and pepper.

  4. Heat a drizzle of oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Transfer to a baking sheet and bake for 12–15 minutes, or until the internal temperature reaches 165°F.

  5. In the same skillet, sauté the onions and mushrooms for 6–8 minutes until softened, golden, and the mushrooms release their moisture.

  6. Remove the orzo from the oven and stir until creamy and combined. Fold in the sautéed mushrooms and onions, then serve topped with the chicken.
