Healthy Homemade Ginger Ale
  1. Slice the ginger into thick pieces and add them to a medium sized pot with 2 ½ cups of water

  2. Let this come to a boil and simmer for 30 minutes

  3. Juice the lemons and add the maple syrup to a jar

  4. Stir to combine

  5. Strain the ginger and mash it with a spoon or potato masher to ensure that you release all of the liquid

  6. Pour the liquid into a jar with the lemon juice and maple syrup

  7. Let this cool and fill a glass with ice, a quarter of the mixture and top with sparkling water
