Pat the pork chops dry with a paper towel. Season both sides generously with your pork seasoning rub. Heat olive oil in a skillet over medium-high heat and sear the chops for 2–3 minutes per side until a golden-brown crust forms.
Place the seared pork chops into the bottom of your slow cooker.
In a small bowl, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes. Pour the sauce evenly over the pork chops.
Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the pork is tender and reaches an internal temperature of 145°F.
Spoon the rich glaze from the slow cooker over the chops before serving. Pair with mashed potatoes or roasted veggies!
