Brown 4 slices of bacon in a large pot or pan with 1 tablespoon of peanut oil
Cut savoy cabbage into half-inch pieces (about 8-10 cups total) and add to the pot
Cook the cabbage and bacon for a few minutes
Add 1.5 cups chopped onion and 1 tablespoon chopped garlic to the pot
Cook for another couple of minutes
Add 0.25 cup cider vinegar, 1 tablespoon brown sugar, 1 teaspoon salt, 0.25 teaspoon pepper flakes, and 0.5 cup water
Cover the pot and braise for 40-45 minutes until cabbage is tender
Taste and adjust seasonings as needed
Garnish with chives if desired and serve
