Preheat oven to 180℃ (160℃ fan)
Cream together the butter and Silver Spoon Caster Sugar until light and fluffy
Mix in the self raising flour until combined
Beat in the eggs with the vanilla extract
Pour into a lined traybake tin and bake for 30-35 minutes, until golden and springy to the touch
Leave to cool completely
Mix Silver Spoon Icing Sugar with reduced strawberry puree and water if needed until smooth and glossy
Spread icing over the cooled sponge
Top with sprinkles of your choice
Make letters using Silver Spoon Fondant Icing coloured with red food colouring and place on top
