Peach Crumble Baked Oats
  1. Preheat the oven to 190°C and line an 8” square tin.

  2. Mix streusel ingredients and place in the fridge to harden.

  3. Whisk eggs, milk, banana, maple and vanilla together.

  4. Stir in oats, oat flour, baking powder, cinnamon and salt.

  5. Dice 1 peach and add it to the batter along with the blueberries. Leave batter to rest for 5-10 minutes.

  6. Meanwhile, slice the remaining 2 peaches and toss with cinnamon and lemon juice.

  7. Pour the batter into the lined tin. Layer the peach slices on top, then crumble on the streusel.

  8. Bake for 30-35 minutes, until set. Allow to cool for a few mins before slicing.
