Preheat oven to 375°F and grease a muffin tin well or use silicone muffin cups.
Add cottage cheese and eggs to a blender or food processor. Blend until smooth.
Pour the mixture into a bowl. Add cheddar, Parmesan, almond flour, garlic powder, onion powder, paprika, salt, pepper, and melted butter. Stir until thick and cheesy.
Spoon a small amount of mixture into each muffin cup. Add a pinch of mozzarella in the center.
Cover with more mixture and sprinkle extra cheddar cheese on top.
Bake for 18 to 22 minutes, or until golden on top and set around the edges.
Let the muffin cups cool for 5 to 10 minutes before removing from the pan.
Serve warm and pull apart for the cheesy lava center.
