Preheat oven to 375 F and line baking sheet with parchment paper or grease pan.
Heat a skillet over medium high heat. Add pancetta (or ground sausage, turkey, etc) - let cook until cooked through, and drain excess fat.
Add veggies - garlic, onion, tomatoes, and spinach (or whatever veggies you like). Let cook until onions are soft and spinach has wilted.
Whisk eggs until smooth. Season with salt and pepper.
Add in cottage cheese and veggie mixture from pan, almond flour, all purpose flour, and baking powder. Stir until batter forms. Let sit for about 5 minutes.
Scoop batter onto baking sheet (I use a ¼ cup measuring cup). Sprinkle a bit of shredded cheese on top.
Bake for 18-25 minutes, until golden and firm to touch. Storage in the fridge for 4-5 days- great reheated in microwave or air fryer!
