Oil-free Baked Falafels
  1. Preheat oven to 400 ˚F.

  2. Drain, rinse, and pat dry the chickpeas, then add them to the processor along with the minced garlic and onion. Pulse 3-4 times until no whole chickpeas remain. Empty the contents into a bowl.

  3. Finely mince the parsley, cilantro, or spinach and add that to the bowl. Add lemon juice, baking powder, salt, and cumin and mix well. Add up to ½ cup of oat or wheat flour and mix well. The dough should hold together when squeezed but should not be sticky or gummy.

  4. Form into 6 patties approximately ¼-cup each. Place on a parchment-lined baking sheet and bake for 25 minutes. Flip and bake for an additional 5-10 minutes longer.
