Double Chocolate Protein Muffins
  1. Preheat oven to 350 degrees and line a muffin tin with 12 liners.

  2. Whisk together the eggs, applesauce, almond milk, and maple syrup until fully incorporated.

  3. Add in the oat flour, cacao powder, protein powder, baking soda, baking powder, and salt and stir until just combined. The batter will be relatively thick.

  4. Fold in ¾ cup of the chocolate chips, then evenly disperse the batter into the 12 muffin liners.

  5. Top off with the remaining chocolate chips and bake for 22-26 minutes, or until a toothpick comes out clean.

  6. Let cool completely before enjoying and store in an airtight container in the fridge for up to five days.
