In a food processor, pulse the pistachios until finely chopped.
Add the almond flour, sea salt, and cinnamon and pulse to combine.
Add the melted coconut oil, honey, and cocoa powder and process until a dough forms.
Stir in the shredded coconut.
Scoop the mixture by the tablespoon and roll into balls.
Refrigerate for at least 30 minutes before serving.
