Buffalo Chicken Guacamole
  1. Mix all the guacamole ingredients in a large bowl. Only use half the blue cheese. Mash to combine, but don't over-mash so there is still some texture from the avocados and blue cheese

  2. Preheat a large nonstick pan with the peanut oil. Add in the chicken and cook a few minutes to sear on all sides. Turn heat to low and add in the butter, cayenne sauce, bbq sauce, and honey. Stir to combine and lightly simmer for 5 minutes until the sauce thickens up and clings to the chicken.

  3. Spread the guac in a bowl making a large indentation in the top of the guac.

  4. Pour the chicken and juices into the indentation of the guac

  5. Top with the remaining blue cheese. Serve with chips.
