Add all the ingredients into a food processor except for the chocolate topping ingredients
Blend until it forms a chocolate dough, if the batter seems too wet to be a dough then add a little more oats
Turn the dough out onto a tray lined with parchment paper and press down and shape the dough into a rectangle of whatever thickness you'd like your bars to be
Melt the dark chocolate with the coconut oil in a bowl over a saucepan of gently simmering water
Spread the melted chocolate over the top of the bar and place into the freezer for 10 mins to harden before cutting into bars
