Preheat the oven to 200c
Take a roll of puff pastry, unroll it and place it on a baking tray
Score a border an inch wide around the whole sheet of pastry
In a bowl, whip together 160g of ricotta with, a pinch of salt and a grind of black pepper
Spread the ricotta evenly on the pastry sheet, staying within the border
Add your preferred toppings
Egg wash the border of the pastry
Bake in the oven for 30 mins or until golden brown and crisp
