Ingredients
Rinse beans well.
Soak 10–12 hours in plenty of water.
Optional (very helpful): add ½ tsp baking soda to the soak.
Drain completely and rinse very thoroughly.
👉 This removes most gas-causing sugars.
Step 2: Optional pre-boil (extra gentle)
If you’re very sensitive:
Add soaked beans to Instant Pot.
Cover with water.
Pressure cook 5 minutes, then Quick Release.
Drain, rinse, and return beans to pot.
Step 3: Onion & garlic flavor (low-gas trick)
Set Instant Pot to Sauté (Low or Normal).
Add 1 tbsp oil or butter.
Add chopped onion + smashed garlic.
Cook gently 3–5 minutes, just until soft and fragrant.
Step 1: Soak the beans (important)
Add to the pot:
Stir gently.
Lock lid.
Cook on High Pressure for 30 minutes.
Let Natural Release for 15–20 minutes, then vent.
Step 6: Finish & season
Remove bay leaf and ginger slices.
If using a ham hock, remove it, shred meat, return meat to pot.
Taste before salting (ham adds salt).
Add salt and black pepper as needed.
