Filling
Crust
Using a hand mixer, mix cream cheese until very smooth.
While mixing, add in sugar and mix.
Stir in 3 eggs, one at a time until incorporated.
Add in ube jam and mix with mixer.
Stir in vanilla extract and ube extract.
Stir in heavy cream
In a separate bowl, combine graham cracker, sugar and salt and mix to combine.
Add melted butter and mix until combined.
Place circular cut parchment paper in bottom of springform cake pan.
Cover bottom and sides with melted butter.
Add crust ingredients and go up the side a little bit.
Pour in filling.
Place springform tin in a large casserole dish and pour in hot water.
Bake for 1 ½ hours at 325F.
After 1 ½ hours, turn off the oven, but leave cheesecake in for another 1 hour.
Let rest in the fridge overnight in the springform pan.
Pull from fridge the next day and enjoy.
