Thinly slice iceberg lettuce and mince pickles
Combine light mayo, no sugar added ketchup, mustard, and minced pickles to make the sauce
Place a low carb tortilla on a surface and spread ¼ pound of extra lean ground beef evenly on top to cover the entire tortilla
Season the beef with salt and freshly cracked black pepper
Heat a pan with spray oil over high heat
Sear the taco meat side down for a couple minutes, pressing down for maximum caramelization until nicely browned
Flip the taco over and turn down the heat
Add a slice of low fat American cheese on top
Cook until the tortilla is crisp and the cheese is melted
Plate the taco and top with the sauce and shredded lettuce
Serve and enjoy
