Smash Burger Tacos
  1. Thinly slice iceberg lettuce and mince pickles

  2. Combine light mayo, no sugar added ketchup, mustard, and minced pickles to make the sauce

  3. Place a low carb tortilla on a surface and spread ¼ pound of extra lean ground beef evenly on top to cover the entire tortilla

  4. Season the beef with salt and freshly cracked black pepper

  5. Heat a pan with spray oil over high heat

  6. Sear the taco meat side down for a couple minutes, pressing down for maximum caramelization until nicely browned

  7. Flip the taco over and turn down the heat

  8. Add a slice of low fat American cheese on top

  9. Cook until the tortilla is crisp and the cheese is melted

  10. Plate the taco and top with the sauce and shredded lettuce

  11. Serve and enjoy
