Lentil Soup
  1. Put all the stock ingredients into a pressure cooker and cook for 59 minutes. (Or on a hob for at least 2 hours)

  2. Release the pressure, remove the ham Hough and strain the stock into a pan. Discard the veg, shred the ham, and put that and the stock into the fridge overnight once cool.

  3. Remove stock from fridge and scrape off the fat and discard.

  4. Blitz/chop the soup veg in a food processor and add to the stock.

  5. Wash the lentils and split peas and add to the stock.

  6. Bring to the boil and simmer for about an hour.

  7. Add the shredded/chopped ham hough and heat through.

  8. Season to taste.
