Heat up the ghee or oil in the pan over medium heat. Sauté the onion until soft (1-3 min depending how big you chop)
Add the garlic and sauté until fragrant (~1 min)
Add the carrots, smoked paprika, salt & pepper. Sauté and mix everything
Pour in the orzo, mix it all then add the broth and Dijon mustard.
Bring to a boil then cover and cook for 5 minutes.
Add the milk and broccoli then cover and cook for another 5 minutes.
Turn the heat off, sprinkle in the cheddar and Parmesan cheese then stir to combine
Top with optional black pepper, nutritional yeast or more Parmesan
