Serves 3-4
Time: 1 hour
Ingredients:
Spice mix
Chicken
Cherry & Fennel Salad
In a mortar and pestle, crush black peppercorns, coriander seeds, coffee beans, and fennel seed until finely ground. Add in salt and mix until evenly dispersed.
Preheat grill over medium high heat for 10-15 minutes.
Pat chicken dry with paper towel and sprinkle spice mix all over the chicken.
Once grill is hot (500-600F), turn off one side of the grill, keeping one side of the grill lit.
Place chicken skin side down on direct heat and cook for 5 minutes until grill marks appear on chicken.
Flip chicken over and slide chicken over to non-lit side of grill (indirect heat) and close lid. With the lid closed, you’re looking for an internal grill temperature of around 350-400F . Rotate chicken every 15 minutes for even cooking and browning. Cook with the lid closed for 40-55 minutes. Rest for 15 minutes before cutting into it.
As the chicken rest, prepare the salad. Add sliced fennel, cherries, mint, dill and chili flake to a bowl. Sprinkle vinegar, and olive oil over salad. Season with salt and pepper and serve with grilled chicken.
NOTES:
To spatchcock chicken:
Using a sharp knife, starting at the neck of the chicken, make long knife incisions on both sides of the neck from the neck to the butt.
Using kitchen shears, cut along the incisions cutting through the chicken carcass.
Save back bone for stock!
Flip chicken over and press down on breast to break breast bone to flatten chicken.
