Charred Greek-inspired Chicken Thighs
  1. Add the yogurt, mayo, olive oil, garlic cloves, oregano, cloves, lemon zest/juice, salt, and black pepper in a bowl. Stir to combine, thinning with a small splash of water if needed. You want this to have a paste-like consistency.

  2. Add in your chicken thighs and toss with the marinade, ensuring all sides are thoroughly covered. Cook right away or marinate up to overnight but no longer than that otherwise the greek yogurt will start to break down the chicken.

  3. Spray a large baking sheet with oil, lay your chicken in an even layer, then generously spray the chicken with additional oil.

  4. Broil on high for about 12-15 minutes or until charred and the chicken is cooked through, keeping an eye on it while it cooks as oven broiling temperatures vary widely. Alternatively air fry at 425°F for ~15 minutes, shaking the basket every 5 minutes.
