Blueberry Custard Toast
  1. Preheat oven to 350 degrees F.

  2. In a small bowl, whisk together the egg, Greek yogurt, vanilla, and lemon zest until smooth.

  3. Place bread on a parchment-lined baking sheet or in an air fryer basket.

  4. Press the center of each slice down with the bottom of a glass or the back of a spoon to make a shallow pocket, leaving the edges intact.

  5. Spoon the custard into each pocket, top with blueberries, and add a little extra lemon zest if you want.

  6. Bake for 18 to 22 minutes, or until the custard is set and the toast is lightly golden. Ovens vary, so check it near the end.
