Soak the gelatin sheets in cold water for about 10 minutes until soft. (Alternatively, add the gelatin straight to the cream and sugar mixture if you prefer to skip this step.)
Heat the cream in a medium saucepan over medium heat, pour in the cream and add the sugar. Stir until the sugar is fully dissolved.
Squeeze the excess water from the gelatin and add the sheets one by one into the warm cream mixture, stirring constantly until completely dissolved.
Pour the mixture into glasses, ramekins or a tray. Let cool at room temperature, then refrigerate until set.
Once firm, spoon over your fruit sauce and serve cold. That's it, dessert like a true nonna on holiday!
