Pre-heat oven to 180C fan
Cut each sheet of filo into 4 quarters
Cut the brie into 10 even pieces
Place the brie into the centre of each piece of filo
Drizzle with honey, sprinkle with pistachio, add thyme, salt and pepper
Brush half of the filo with olive oil and roll over the brie into a parcel
Transfer to a baking tray and brush with more olive oil
Sprinkle with pistachios and chilli flakes
Bake for 12-18 minutes until crisp and golden
Combine siracha, honey, lemon juice and salt in a small bowl to make sweet chilli sauce
Serve parcels with sweet chilli sauce
