Spiced Pear Olive Oil Cake
  1. Preheat oven to 190°C and grease and line a 9-inch baking tin with parchment paper

  2. Add pears to tray along with caster sugar, cinnamon powder, butter, lemon juice and salt

  3. Toss pears together and place in oven for 15 minutes

  4. Turn oven to grill at 220°C for 6-7 minutes until slightly charred

  5. Remove pears from oven

  6. In a large bowl, whisk together olive oil, sugar and eggs

  7. Stir in ground almonds, all spices, baking powder, bicarbonate of soda, sea salt, yogurt and both extracts

  8. Turn oven down to 170°C fan

  9. Pour cake batter evenly over pears

  10. Bake for 35-37 minutes in the middle of the oven until a skewer inserted comes out mostly clean

  11. Remove from oven and carefully flip cake over onto a plate

  12. Allow to cool for at least 10 minutes before removing parchment paper

  13. Serve warm or at room temperature with a dollop of crème fraîche and chopped pistachios
