Preheat oven to 190°C and grease and line a 9-inch baking tin with parchment paper
Add pears to tray along with caster sugar, cinnamon powder, butter, lemon juice and salt
Toss pears together and place in oven for 15 minutes
Turn oven to grill at 220°C for 6-7 minutes until slightly charred
Remove pears from oven
In a large bowl, whisk together olive oil, sugar and eggs
Stir in ground almonds, all spices, baking powder, bicarbonate of soda, sea salt, yogurt and both extracts
Turn oven down to 170°C fan
Pour cake batter evenly over pears
Bake for 35-37 minutes in the middle of the oven until a skewer inserted comes out mostly clean
Remove from oven and carefully flip cake over onto a plate
Allow to cool for at least 10 minutes before removing parchment paper
Serve warm or at room temperature with a dollop of crème fraîche and chopped pistachios
