Kenjis Quick Tortilla Espanola
  1. Peel and slice potatoes. Sautee potatoes until they are soft and lightly browned

  2. Add onions until they are slightly browned, season with half of the salt.

  3. Break eggs into bowl, season with second half of the salt + pepper, beat moderately well e.g. with chopsticks

  4. Dump potatoes hot into the eggs and stir a bit

  5. Put some more olive oil into pan and transfer everything into pan again, brown a bit over quite high heat

  6. Once bottom is browned flip, tuck in edges a bit, flip it a few more times if you want to make the shape nicer

  7. Optionally prepare some Aioli (quick recipe: Mayonnaise, Olive oil, 1 clove garlic, black pepper)

  8. Cut into squares and serve with dip
