Add all ingredients (flour, yeast, salt, water) to a bowl and stir together really well until lump free for about a minute
Add olive oil to a rectangle dish and pour the dough in, cover and leave for 30 minutes
Stretch and fold the dough as shown, cover and rest for 30 minutes
Wet hands and lift up dough, fold over in coils about 7-8 times, rest for 30 minutes
Repeat coils with wet hands, about 4-5 coils this time, cover and rest for 30 minutes
Do a couple more coils, cover and rest for 30 minutes
Heavily flour the dough and surface, turn out and cut with a scraper or knife using flour, place carefully onto parchment paper
Let rest for 30 minutes while preheating oven to 240°C fan or air fryer to 240°C
Cook in air fryer at 240°C for 10 minutes, then turn down to 200°C, flip over and cook for 5-8 minutes until fully cooked and crispy
Let cool for 10-15 minutes, then slice and butter
