Marinate Shrimp
Whisk grated garlic, salt, and 1 Tbsp olive oil.
Add shrimp, toss to coat.
Chill uncovered 30 minutes to 1 hour.
Cook Shrimp and Make Sauce
Heat 2 Tbsp olive oil in a skillet over medium.
Cook marinated shrimp mixture until shrimp is pink but underdone, about 1 minute per side.
Transfer shrimp to a plate, leaving oil in skillet.
Add sliced garlic and red pepper flakes to skillet. Cook, tossing, until fragrant, about 1 minute.
Add white wine and lemon juice. Cook, stirring occasionally, until reduced by half, about 2 minutes.
Add butter. Cook, stirring and swirling, until melted and sauce is thickened, about 5 minutes.
Add shrimp and any accumulated juices to skillet.
Toss and cook until shrimp are fully cooked, about 2 minutes.
Garnish with parsley.
