In a large mixing bowl, combine the almond butter, almond flour, coconut flour, powdered sweetener, cocoa powder, and vanilla extract. Stir well using a spatula, or get your hands in there to mix until you have a slightly crumbly dough.
Grab small portions of the dough (about 30g each if you're measuring) and roll them into balls with your hands.
Roll each ball in shredded coconut or crushed nuts for an extra crunch.
Place the balls on a tray or plate and refrigerate for 1-2 hours to firm up before serving.
