Slice courgettes into thick rounds. Fry in olive oil for 7-8 minutes until deep golden, flip, add garlic and pepper, mash lightly.
Stir in beans, stock, nutritional yeast and juice of half a lemon.
Mix olive oil, chilli flakes, breadcrumbs, nutritional yeast, salt and pepper to make the pangrattato.
Scatter pangrattato mix over beans and grill on high until golden and crisp.
Finish with lemon zest and chives. Eat hot, straight from the pan.
