Thai Quinoa Salad
  1. Cook 175 g quinoa according to package instructions

  2. Chop red bell pepper, spring onions, carrot, and cucumber into bite-sized pieces

  3. Prepare sugarsnaps and edamame beans

  4. Slice chilli pepper finely

  5. Prepare Pulled Oats according to package instructions

  6. In a bowl, whisk together sesame oil, soy sauce, hot sauce, and lime juice to make dressing

  7. Combine cooked quinoa with all chopped vegetables and edamame

  8. Add Pulled Oats to the salad

  9. Pour dressing over the salad and toss well

  10. Sprinkle with cumin powder

  11. Garnish with fresh mint and fresh coriander

  12. Serve immediately
