Sift the matcha: Place a fine-mesh sieve over your matcha bowl or mug and press 1 to 2 teaspoons of matcha powder through it to remove all clumps.
Add hot water: Pour 2 tablespoons of water heated to 175°F over the sifted matcha powder. Do not use boiling water as it will turn the matcha bitter.
Whisk to a paste: Use a bamboo chasen or small milk frother in a fast zigzag W or M motion for 30 to 45 seconds until a smooth, frothy paste forms with no visible lumps.
Heat the milk: Warm your milk of choice to approximately 150°F using a small saucepan over low heat or a milk frother. Froth for a foamy top layer if desired.
Combine and sweeten: Pour the warm milk over the matcha paste slowly while stirring gently. Add maple syrup, honey, and vanilla extract if using. Taste and adjust.
Serve immediately: Pour into a warmed mug and serve right away for the best flavor and maximum antioxidant benefit. For an iced version, let the paste cool, pour over ice, and add cold milk.
