Salted Caramel Banana Bread
  1. Heat the oven to 180°C (160°C fan) and line a loaf tin.

  2. Cream the butter and sugar until light and fluffy.

  3. Gradually beat in the eggs.

  4. Fold in the flour and baking powder, then stir through the mashed bananas.

  5. Arrange the bananas in the base of the lined loaf tin.

  6. Heat the sugar and water until dissolved, then let it bubble without stirring until it reaches a deep amber colour.

  7. Remove from the heat and carefully whisk in the butter until smooth and glossy.

  8. Stir through a generous pinch of flaky sea salt.

  9. Pour the caramel evenly over the bananas and leave for 2–3 minutes before spooning over the banana bread batter.

  10. Bake for 45–55 minutes, until a skewer comes out clean.

  11. Allow to cool slightly before turning out, then finish with another pinch of flaky sea salt.
