Add dates to bowl (with no stones) top with boiling water (just enough to slightly cover them) about 60ml and leave to soak
Add nuts & oats to a food processor and blend till it becomes crumb like texture (you might need to stir the mixture)
Preheat oven to 180C and add parchment paper to a large baking dish
Blend the dates and water, stir the peanut butter with the melted butter and add to the dates
Pour in the nut and oat mix and the cocoa powder and mix well till everything is combined
Roll the mixture into equal size balls (I normally get between 20-24) place on your tray
Wet the back of a spoon and press down the balls into a flat cookie shape
Bake 180C 16-18 min, once they're out melt chocolate with butter (about 50 seconds in microwave but check after 30 seconds and every 10 seconds after) add a little to each cooking and spread
Add any toppings you like, I did some pistachio crumbs and sea salt and left some plain
Place in the fridge to set for at least 1 hour
