Zucchini Pasta
  1. Cook pasta to 2 minutes less than packet instruction in heavily salted water

  2. Fry the thick zucchini slices until slightly golden and set aside

  3. Fry the thin zucchini until golden and crispy

  4. In a pan add 2 tbsp EVOO and cook the garlic on medium for 1 minute

  5. Add ⅔ of the thick fried zucchini and move it around so it smashes a bit to make it saucy

  6. Add lemon zest and lemon juice, saving some zest for serving

  7. Add the cooked pasta and remaining thick zucchini with some pasta water

  8. Turn heat off and add basil, provolone cheese and Parmesan cheese, mix well

  9. Serve with fried zucchini, extra basil, Parmesan and lemon zest
