Preheat oven to 180C
Mix all the filling ingredients together except for a bit of the pistachios to sprinkle at the end
Cut the puff pastry in half horizontally and spread the filling mix over one half, cover with the other half
Cut into 4 columns and then diagonally across to create triangles
Brush with egg, bake for 22-25 minutes until puff and golden
Remove from the oven, drizzle with honey, sprinkle with pistachios
