Simple Rice Porridge (atole De Arroz)
  1. Cook the rice base: Rinse the rice under cold water until the water runs mostly clear. In a medium saucepan, combine the rice, water, cinnamon stick, and pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cover partially and cook for 15–20 minutes, stirring occasionally, until the rice is very soft and most of the water is absorbed. (It should look like a loose porridge.)

  2. Add dairy and thicken: Stir in the milk, condensed milk/sugar, and vanilla. Simmer on low heat, stirring frequently (almost constantly toward the end to prevent sticking), for another 10–15 minutes until it thickens to your desired creamy consistency. It will continue to thicken as it cools. Add more milk if it's too thick.

  3. Finish and serve: Remove the cinnamon stick (if using a whole one). Taste and adjust sweetness. Serve warm, sprinkled with ground cinnamon. Add raisins or other toppings if you like.
