    In a separate bowl, mix together the egg yolks, drained cottage cheese, cornstarch, cream of tartar, powdered sweetener, vanilla extract, and lemon zest (if using).

  4. Gently Fold the Mixtures Together:

    Carefully fold the beaten egg whites into the cottage cheese mixture until just combined.

  5. Add the Blueberries:

    Gently fold in the blueberries, being careful not to overmix.

  6. Scoop & Shape:

    Spoon the batter onto a baking sheet lined with parchment paper, shaping it into rounds.
