Zucchini Baba Ganoush
  1. Cut the zucchini in half and score diagonally.

  2. Fry the zucchini in some oil until charred and soft (takes about 10mins in total, cover or put on something heavy for best results).

  3. Add the fried zucchini to a blender.

  4. Add the tahini, lemon juice, salt, garlic, ground coriander, and cumin.

  5. Blend until smooth and enjoy as a dip.

  6. It'll last in the fridge 4-5 days.
