Place the DRY rice paper sheet into a frying pan when the pan is cold.
Turn the heat on low and spread the chilli oil all over. As the pan heats up, the rice paper will start to curl upwards.
Carefully crack an egg onto the rice paper and mix/break up the yolk with a fork to spread it over the rice paper. Some of it might spill over but that's fine.
Add any toppings of your choice to one half of the rice paper. It can be anything from sliced hot dogs, torn up ham, sliced sausages, grated cheese / cheese singles.
Season with some kewpie (or just normal) mayo and sriracha and add in some chopped spring onions or fresh coriander.
Fold over the other half to make a half moon shape, kind of like a quesadilla.
Remove from heat and serve immediately while some of the rice paper is still crispy. The rice paper will soften over time so eat it asap!
