Cranberry Bread
  1. Grate the rind of 1 orange.

  2. Squeeze the juice and add enough water to make ¾ cup of liquid.

  3. Add the grated rind.

  4. Add 2 tbsp butter, stir to melt.

  5. In another bowl, beat 1 egg and 1 cup sugar well and stir into the orange mixture.

  6. Add 1 cup chopped cranberries and ½ cup chopped walnuts.

  7. Sift together 2 cups flour, ½ tsp baking soda, and ½ tsp salt.

  8. Stir into the first mixture.

  9. Spoon into a buttered loaf pan (9 x 5).

  10. Bake for 1 hour at 325 degrees.
