Generously rub brisket with salt and pepper
Heat avocado oil in a large pot until very hot
Add brisket pieces fat side down and leave undisturbed for 5-6 minutes
Flip brisket to the other side and leave undisturbed for 5 more minutes until seared
Remove meat from pot and lower heat to medium
Add carrots, onions and garlic to the pot, sautéing for 4 minutes
Add smoked paprika, dried thyme, ground black pepper, tomato paste, Worcestershire sauce and beef broth
Mix together and let cook for 3-4 minutes
Transfer the mixture to an instant pot and add the brisket back in
Squeeze lime juice into the pot
Cover and set to high pressure for 1 hour 40 minutes
Once done, do a quick release
Blend the liquid using an immersion blender or regular blender to create the sauce
Plate as desired and pour sauce on top
Garnish with fresh chives and serve
