Mapo Tofu Noodles
  1. Crumble your firm tofu, toss in oil, MSG and hoisin and air fry for 12-14 mins at 220C till crispy. Deglaze tray with rice vinegar when cooked.

  2. Cook your noodles or pasta in salted water. Keep some of the cooking water.

  3. Add all the sauce ingredients to a blender and blitz till smooth.

  4. Drain your pasta, toss the hot pasta with the blended sauce and the chilli crunch and the pasta water.

  5. Serve up with the sliced cucumber and spring onion and enjoy!
