Start by blending the tomatoes, shallots, red chilies, and lemongrass together with some oil until you achieve a smooth mixture.
Once blended, incorporate the salt, mushroom bouillon, and sugar into the mixture.
Take some of the spice mixture and coat the red snapper thoroughly, then let it marinate for 20 minutes.
Preheat your grill to medium-high heat and place the fish on it, grilling for 10 minutes on each side.
During the grilling process, brush the fish generously with the remaining spice mixture and grill for an additional 3 to 5 minutes.
