Preheat oven to 375℉.
In a large mixing bowl, whisk together 2½ cups flour, 1 tbsp baking powder, 1 tsp kosher salt, and 1 tsp black pepper.
Using a cheese grater, grate your cold butter into the dry ingredients. Mix with your hands or a spoon until the mixture becomes crumbly and mealy in texture.
In a separate bowl, whisk together ½ cup Greek yogurt, ½ cup whole milk, and 1 egg until smooth. Pour into the bowl of dry ingredients and mix until just combined.
Fold in the shredded cheddar cheese, chopped bacon, cooked sausage crumbles, and sliced scallions. The dough should be slightly sticky but still manageable. If it feels too dry, add additional whole milk 1 tbsp at a time.
Transfer dough onto a parchment-lined baking sheet and shape into a large circle about 1 inch thick. Cut into wedges, similar to slicing a pizza.
Optional: Brush tops with a little milk and sprinkle with extra cheddar, black pepper, and flaky salt.
Bake for 22–28 minutes or until golden brown and cooked through.
Serve warm with salted butter, hot honey, maple butter, or even a fried egg on top.
